Ingredients 1.5 lb. Crabs 1 cup Rice cake cup Ginger 13 cup Scallion 18 cup Garlic 1 tbsp Sugar 1 tbsp Salt 1 tbsp Soy sauce 1 tbsp Oyster sauce 2 cup Water 1 tbsp Cooking wine Cornstarch ------------------------ Directions 1. Clean the crab and open the shell. Remove the gills and cut into pieces. 2. Coat the chopped crabs with cornstarch. 3. In a large pan, turn up to high heat, add cooking oil, and transfer the crabs into the pan. Pan-fry a while and move them out. Set aside. 4. In the same pan, put in rice cake, pan-fry until turns brown and crispy on the surface. Transfer to the same plate with cooked crabs. Set aside. 5. In the same pan, add oil, chopped scallion, sliced ginger and garlic, stir-fry well. Put in the cooked crabs, rice cake. Whisk in cooking wine. Season with sugar, salt, soy sauce and oyster sauce. Pour in water. Simmer for 5 minutes. 6. Turn down the heat and serve immediately. Garnish with minced scallion. --------------------------- King Crab with steamed riceby Master Chef Luo Chef Luo used Alaskan king crab and legs in this dish. Theyve got loads of flavor and are easy eating as you dont have to work hard to get at the crab meat. The crab legs are coated in a buttery peppery Chinese sauce. Ingredients 8 lb. King Crab 1 cup Super Grains A blend of white and red quinoa, millet and buckwheat 13 cup Ginger cup Scallion 13 cup Garlic cup Shallot cup Mushroom 1 cup Okra 18 cup Peas 18 cup Carrot 18 cup Dried chili pepper 2 cup Chicken broth 1 tbsp Black pepper cup Soy sauce 18 cup Honey 13 cup Butter cup Cooking wine cup Oyster sauce ----------------------- Directions 1. Wash super grains carefully. Drain it well in a bowl. Set aside. 2. In a medium rice cooker, pour in super grains, water and a few crab meat in crab shell. Put on the lid and cook for 10 minutes. 3. Heat up a large pan, pour in water, bring it to boil. Put in diced Okra, diced mushroom, diced carrot and peas. Cook them well. Transfer to the rice cooker, and mix with cooked rice. 4. Chop the king crab into pieces. Coat all the pieces with cornstarch. Transfer to a large pan with boiling oil. Fry for a while. Remove out and set aside. 5. In the same pan, put in minced ginger, minced garlic, minced scallion and chopped dried chili. Stir-fry until sauté. Add chopped shallot and butter. Keep fry until butter melted. Sprinkle some black pepper. Whisk in soy sauce, cooking wine and chicken broth. 6. Put the cooked crab back to the pan, pour in oyster sauce, honey and water. Put on the lid and simmer with 1 minutes. 7. Open the lid and fry for a while. Transfer to a plate.
