You can prepare all these in advance and arrange them in a baking dish, ready to be stowed into the oven just a while before the guests arrive. Watch their faces light up as the aroma of tomatoes, onions, melting cheese and browning rice waft out of the oven tantalizingly. Preparation Time 25 minutes. Cooking Time 20 minutes. Serves 4. Baking Temperature 200C 400F. Baking Time 15 minutes. For the Mexican rice 3 cups cooked long grained rice chawal 1 tbsp oil cup finely chopped onions tsp ginger adrak paste 1 tsp garlic lehsun paste cup chopped and boiled French beans cup chopped and boiled carrot 1 tsp chilli powder Salt to taste For the cheese patties cup grated processed cheese 1 cup boiled, peeled and mashed potatoes cup crumbled paneer cottage cheese 2 tbsp finely chopped coriander dhania 2 tsp finely chopped green chillies 1 tbsp cornflour Salt to taste Oil for greasing and cooking For the tomato sauce 1 cups fresh tomato pulp 1 tbsp oil cup finely chopped onions 1 tsp garlic lehsun paste tsp chilli powder tsp dried oregano tsp sugar Salt to taste For the topping cup grated processed cheese For the Mexican rice 1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes. 2. Add the ginger and garlic paste and sauté on a medium flame for a few seconds. 3. Add the french beans, carrots and chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. 4. Add the rice and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside. For the cheese patties 1. Combine all the ingredients in a deep bowl and mix well. 2. Divide the mixture into 12 equal portions and roll each portion into a 50 mm. 2 diameter flat round patty. 3. Heat a non-stick tava griddle, grease it with a little oil, place all the patties on it and cook on a medium flame, using a little oil till they turn brown in colour from both the sides. Keep aside. For the tomato sauce 1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 2 minutes. 2. Add the tomato pulp, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside. How to proceed 1. Just before serving, spread the rice on a greased deep baking dish. 2. Place the cheese patties over the rice and evenly spread the tomato sauce. 3. Top it with cheese and bake in a pre-heated oven at 200C 400F for 10 minutes. Serve hot.
