Bitter Gourd Pakoda Ingredients Bitter gourd medium 2-3nos Salt 2tbsp Sugar 2tbsp Refined Flour 1cup Rice Flour cup Ajwain 1tsp Turmeric tsp Red Chilli Powder tsp Chaat Masala 1tsp Red chilli powder 1tsp Dry mango powder 1tsp Method 1. Take the bitter gourd without scraping and cut slantwise about 2nos . 2. Put in a bowl add salt,sugar and mix well to rub the salt and sugar starts dissolving. 3. Leave it for 15-20 minutes to complete dissolve sugar to cutdown bitterness. 4. Take a bowl to put gram flour 1cup,flour cup,ajwain1tsp,turmeric powder tsp,red chilli powder tsp,little salt or omit . 5. Add water to make batter , mixwell and rest for 15minutes because riceflour absorb water. Then readjust the batter consistency by adding water. While resting the gramflour to get swollen texture by absorbing water. By mixing the batter again and again ,you can avoid sodium bicarbonate. 6. After resting ,if you need to adjust batter consistency then add little water and mixwell . 7. Squeezed the seasoned bittergourd to remove excess water and put into the gramflour batter. 8. Now put in hot oil one by one and fry till half done and strain. Now repeat second batch till half fry. 9. Again heat the oil and put all half fry pakodas till golden brown in colour. Strain and spread on tissue paper to absorb oil. 10. Sprinkle chaat masala,little red chilli powder and dry mango powder. Mix well . 11. Serve in a serving plate.
